Fudge Brownie Pie
A group of my friends recently had a “pie party” in which everyone brought a pie to share. I knew I would not have time that day to bake the pie so I chose a pie that I could prepare ahead of time and serve frozen. I found this recipe on page 175 of the Favorite Brand Name Baking cookbook. The recipe says to refrigerate but by looking at the recipe I could tell that it would also be okay to freeze, and just thaw a bit before serving.
1 pkg (19-21 oz) fudge brownie mix
1 c. cold milk
1 pkg (4-serving size) JELL-O Instant Chocolate Pudding
8 oz. COOL WHIP whipped topping
Prepare brownie mix as directed on package. Bake ~40 minutes in greased 9″ pie plate. Cool completely.
Scoop out the center of the brownie, using a spoon. Least 1″ crust around the edge and a thin layer of brownie on bottom. Reserve the brownie scraps.
Pour milk into medium bowl and add pudding mix. Beat with whisk until blended. Gently stir in half of the whipped topping and all but 1/4 c. of the reserved brownie scraps. Spoon into the center of the crust. Top with remaining whipped topping and reserved 1/4 c. brownie scraps.
Refrigerate 3 hours or until ready to serve.
