Giant Spiced Peanut Butter Cookies
It is hard to believe Thanksgiving has passed, December has arrived and we area already to Week 10 of the 12 Weeks of Christmas Cookies! The cinnamon cookies I made last week inspired me to try something completely new using cinnamon – a spiced peanut butter cookie. I thought the addition of cinnamon and nutmeg would be a good way to “winterize” a basic peanut butter cookie.
I spruced up the cookies even more by half-dipping in chocolate….
and adding Sweet Cinnamon Sprinkle on top.
My initial idea was to use white chocolate but I also tried a few cookies in milk chocolate.
And don’t forget the Sweet Cinnamon Sprinkle on those too!
To make this more festive for your holiday gatherings you could use red and green sprinkles.
Krista’s Giant Spiced Peanut Butter Cookies
- 1 cup Butter
- 1 cup Peanut Butter
- 1 cup Sugar
- 1 cup Brown Sugar
- 2 Eggs
- 1 teaspoon Vanilla
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1/2 teaspoon Cinnamon
- 1/4 teaspoon Nutmeg
- 3 cups flour
- 3 tablespoons Sugar
- 1 teaspoon Cinnamon
Cream butter, peanut butter and sugars. Beat in eggs and vanilla until light and fluffy. In a separate bowl stir together baking soda, baking powder, cinnamon, nutmeg and flour. Add dry ingredient to butter/sugar mixture.
In a small bowl stir together sugar and cinnamon. Use a 1/4 cup scoop to dip cookie dough. Form into balls and roll in cinnamon sugar mixture. Place on a greased cookie sheet. Press with a fork to get the traditional peanut butter cookie criss-cross look, if desired. Bake in preheated 350 degree oven for ~15 minutes, or until cookies are lightly browned. Remove from pan and allow cookies to cool completely.
Melt preferred chocolate (milk, dark, white) in the microwave on on a double boiler. Dip half of the cookie into the chocolate and set on waxed paper to harden. Sprinkle with desired topping.
*If you make smaller cookies, adjust baking time accordingly.
