#2. Frozen Triple Chocolate Espresso Cupcakes

I know this is crazy: I do not like coffee, but I love coffee flavor in desserts. I add coffee to cakes, brownies, cookies and it’s so good! Why not add it to cupcakes too? This frozen cupcake has a chocolate coffee cupcake base with chocolate ice cream, drizzled with coffee chocolate fudge sauce and topped with mocha white chocolate cream cheese frosting… that’s a lot of coffee and a lot of chocolate!

I created this chocolate coffee cupcake recipe after reviewing and merging several recipes. You’ll also notice that I like to add sour cream to a lot of cake recipes. If a recipe calls for milk or water I usually change part of that to sour cream, and in this case coffee too!

The recipes I used:

Chocolate Coffee Cupcakes:

1 1/2 c. flour
1 c. sugar
1 c. cocoa
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/2 c. coffee
1/2 c. sour cream
1/4 c. + 2 Tbsp. vegetable oil
1 tsp. vanilla
1 egg

1/3 c. brown sugar
2 Tbsp. cocoa
2 Tbsp. mini semi-sweet chocolate chips
1/4 c. coffee, divided into tsp.

Mix together the dry ingredients: flour, sugar, baking soda, baking powder, and salt. In a different bowl mix the coffee, sour cream, oil, vanilla and egg and add to the dry ingredients.

Divide the batter into the 12 cupcakes in a prepared cupcake pan.

Mix together brown sugar, cocoa and chocolate chips. Sprinkle mixture on otp of cupcake batter. Pour 1 tsp coffee over each cupcake and gently stir to blend.

Bake in preheated 350 degree over for 20-25 minutes.

Let cool. Cut off the rounded tops to make a flat surface. Place in freezer.

Chocolate Ice Cream with Coffee Fudge Sauce:

Remove ice cream from freezer and spread onto frozen cupcakes. Add 1/4 c. coffee to cooled Homemade Chocolate Fudge Sauce (click link for recipe) and drizzle over ice cream. Return to freezer.

Mocha White Chocolate Cream Cheese Frosting:

Make White Chocolate Cream Cheese Frosting (click link for recipe) and add 2 Tbsp. coffee in place of the water in recipe. Spread or pipe the frosting onto the ice cream. Garnish with chocolate shavings if desired and return to freezer until serving.
