Mocha Almond No Bakes

I am sure these cookies have other names, but I’ve always called them “no bakes” because they are cookies that need no baking. They are easy (especially if you cheat and use the microwave to boil) and they don’t require many ingredients. There are many recipes out there and most are pretty similar but vary in the amounts of the ingredients. I used the No Bake Cookies III (click link to go to website) at allrecipes.com to start with – but as usual I made some alterations and additions. Like I mentioned before, you can use the microwave, but cookies may not set up as well as if you use the stove top. Another tip: when mixing everything together if you stir to much the cookies will not be as shiny – for a nice shiny finish stir the oats, peanut butter and flavoring until just mixed in and drop by spoonfuls immediately.


My recipe:

1 1/2 c. sugar
1/4 c. cocoa
1/2 c. margarine
1/2 c. milk
2 Tbsp. instant coffee powder
3 1/2 c. quick oats
1/2 c. peanut butter
1/2 tsp. vanilla extract
1 tsp. almond extract

In saucepan bring sugar, cocoa, margarine, milk and coffee powder to a rolling boil for two minute (start timing after boil is reached). Remove from heat and stir in oats, peanut butter, and flavorings until just mixed in. Drop by spoonfuls onto waxed paper.
