Mini Chocolate Peanut Butter Banana Cakes

The name “Mini Chocolate Peanut Butter Banana Cakes” is a long name, but it was the best thing I came up with that included everything that’s in these. I started with the Food Network recipe for Peanut Butter Cupcakes, but I used regular butter and omitted the salt. I also baked it as a cake, not as cupcakes. After baking, I let it cool for 10 minutes and then removed the cake from the pan. Then I spread a thin layer of Chocolate Glaze over the cake and topped with Creamy Banana Frosting.


The recipes:

Peanut Butter Cake:

1/4 c. butter
1/2 c. peanut butter
1/2 c. brown sugar
1 egg
2/3 c. milk
1/2 tsp. vanilla
1 1/4 c. flour
1 1/2 tsp. baking powder

Cream butter, peanut butter and brown sugar. Beat in egg. Slowly add milk, vanilla, flour and baking powder until well mixed. Pour in 8″x8″ greased baking pan and bake for about 20 minutes or until toothpick is clean in preheated 350 degree oven.

Easy Chocolate Glaze

2 Tbsp. butter, melted
2 Tbsp. cocoa
1 c. powdered sugar
2-3 Tbsp. water

Melt butter and stir in cocoa and powdered sugar. Add water to desired consistency.

Creamy Banana Frosting:

2 Tbsp. butter, softened
1 tsp. vanilla
1/2 tsp. lemon juice
1/2 c. mashed bananas
1-2 Tbsp. water
3 c. powdered sugar

Beat softened butter with vanilla, lemon juice, and one cup of powdered sugar until smooth. Add mashed bananas and another cup of powdered sugar and beat again until smooth. Add water and additional cup of powdered sugar to reach desired consistency.
