Strawberry Cheese Squares

If you like cheesecake and strawberry pie, this recipe is for you! And – it’s not hard to make. To save more time, use graham cracker crumbs for the crust instead of crushing your own. The simple “cheesecake” layer is baked on top of the crust and that is topped with a layer of strawberry pie filling.

For the crust use the Graham Cracker Pie Crust recipe, except press the crumbs firmly into a 9″ square baking pan and chill while preparing the cheese layer:

8 oz. cream cheese, softened
1/2 c. sugar
2 eggs

Blend cream cheese and sugar, beat in eggs. Spoon over crust. Bake in preheated 350 degree oven for about 25 minutes. Let cool and then refrigerate until completely chilled.

Meanwhile, prepare Strawberry Pie Filling following the recipe exactly.

When the filling has cooled down some, pour it over the cheesecake layer and return to the refrigerator. Serve after the strawberry layer has set.
