Strawberry Pie Filling

Strawberry Pie is one of my favorite desserts that does not involve chocolate. This recipe for strawberry pie filling can be poured directly into a baked pie crust or a graham cracker pie crust to make strawberry pie. Straight from the local home cookbook I ofter refer to:

3 Tbsp. corn starch
1 2/3 c. cold water
1 c. sugar
3 oz. box strawberry gelatin
fresh strawberries, sliced

Mix cornstarch in cold water until dissolved and stir in sugar and strawberry jello. Boil for 1 minutes and cool. Add desired amount of fresh strawberries. Pour into prepared pie crust. Refrigerate. Top with whipped topping before serving if desired.
