4-H Coffee Cake

This recipe is from the 4-H cookbook and it is cooked in the microwave. For a picture see #2 in the 4-H Food Show post.

Cake:
1 1/2 c. flour
1 1/2 tsp. baking powder
1 /2 c. sugar
3/4 tsp. salt
1 egg
3/4 c. milk
1/2 c. oil

Topping:
1/2 c. brown sugar
5 Tbsp. flour (=1/4 c. + 1 Tbsp.)
2 tsp. cinnamon
1/4 c. butter, melted

Place flour, baking powder, sugar and salt in large mixing bowl and stir together. Add egg, milk and oil. Stir until well blended. Pour batter into a round microwave glass cake dish.

Melt butter and add brown sugar, flour and cinnamon for topping. Sprinkle topping over cake batter. Microwave for 7-8 minutes at a medium power level.

Check to see if it is done by inserting a toothpick into the center. If toothpick is clean, cake in done. If not clean, continue microwaving at medium power level for 2 minutes.
