Dark Chocolate Cake

Recently my sister needed to made a Chocolate Cake and I helped her find a good recipe to use. I noticed the recipe for Dark Chocolate Cake I at allrecipes.com and decided that would make a good base recipe. I wrote up the recipe for her to use and subbed coffee for the water and cake flour for the all-purpose flour.

2 c. boiling coffee
1 c. unsweetened cocoa powder
3 c. cake flour
2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 c. butter, softened
1 1/2 c. sugar
4 eggs
1 1/2 tsp. vanilla

In a bowl pour boiling coffee over cocoa and whisk until smooth. Set aside and let mixture cool completely. Meanwhile, sift together cake flour, baking soda, baking powder, and salt; set aside. In a mixing bowl cream butter and sugar together until light and fluffy. Beat in eggs, one at a time, then stir in vanilla. Add the flour mixture alternately with the cocoa mixture. Spread batter evenly between greased cake pans. Bake in preheated 350 degree oven for 25-30 minutes. Make enough batter for 2 9″ round pans or could be divided into 3 8″ round pans.
