Chocolate Caramel Apple Pizza

Our apple tree only produced about a dozen apples this year, well only a dozen “reachable without a ladder” apples this year. Unfortunately those had enough “bad spots” that they wouldn’t make very good eating apples. After cutting them up there was not much left to work with so I came up with this Chocolate Caramel Apple Pizza. I began by making an oatmeal cookie bar dough. I sprinkled chocolate chips and walnuts on top and pressed into the dough. Then I mixed caramel ice cream topping, peanut butter, flour, chocolate chips and walnuts and spread on top of the dough. I arranged apple slices in a pinwheel pattern around the pan and pressed into the dough. After baking I drizzle chocolate and caramel ice cream topping over the top. It was good, but does not keep very well – best if eaten while warm!

Oatmeal Cookie Bar Dough:

1/2 c. sugar
1/2 c. brown sugar
1/2 c. oil
3 eggs
1/2 tsp. vanilla
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1 c. oatmeal
1 c. flour

Mix all ingredients in bowl. Batter will be stiff. Press into greased round pizza pan.

Peanut Butter Caramel Layer

1/2 c. warm caramel ice cream topping
1/2 c. peanut butter
2 Tbsp. flour
1/2 c. semi-sweet chocolate chips
1/2 c. chopped walnuts

Mix all ingredients in bowl. Spread on top of oatmeal cookie bar dough.

Peel ~ 4 apples and cut into thin slices. Arrange in pinwheel pattern on top of the peanut butter caramel layer all the way around the pan. Press each apple into the dough. Bake in preheated 350 degree oven for about 25 minutes, or until the cookie bars are done baking.

Remove from oven and let cool about 10 minutes. Heat chocolate and caramel ice cream topping and drizzle a few teaspoons of both on top of the “pizza”. Serve while warm. If there are leftovers, keep in refrigerator.
