POM Crazy Cake

A recipe in my “POM Series”. Check out my POM Wonderful post for explanation.  

This is based on a recipe found in a local cookbook from my hometown. I guess it is called “crazy cake” because of how it’s made. Look at the recipe directions below and you will see what I mean!

2 c. flour
2 c. sugar
1/3 c. cocoa
2 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
2 Tbsp. vinegar
3/4 c. oil
2 c. Pomegranate Juice

Sift all dry ingredients into a 9×13″ ungreased pan. Make 3 holes in the dry mixture. Into the 1st hold, put 1 tsp. vanilla. Into the 2nd hole, put 2 Tbsp. vinegar. Into the 3rd hold, put 3/4 c. oil. Pour 2 c. cold pomegranate juice over mixture and stir until all ingredients are well blended. Bake 35 minutes in preheated 350 degree oven.

    You stir the whole cake mixture. I think the idea is that you do not even need to use a bowl… although I do not see any reason why it couldn’t be mixed in a bowl first, as long as it is not over-mixed.

    Okay, so you stir within the little holes, or stir the whole cake mixture deal? I’m thinking the latter? It looks de-lish!
