Brown Sugar POM Cookies

A recipe in my “POM Series”. Check out my POM Wonderful post for explanation.  

I have put off making cookies with the POM Wonderful juice because it is rare for a drop cookie recipe to have a very large amount of any sort of liquid in it. But I experimented with the juice in this cookie recipe I developed which uses brown sugar.

 The recipe:

1/2 c. butter
1 c. brown sugar
1 egg
1/2 c. POM Pomegranate Juice
1/2 tsp. vanilla
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. baking powder
2 c. flour

Cream butter and brown sugar. Beat in egg, pomegranate juice and vanilla. Stir in remaining ingredients. Drop by spoonfuls onto greased baking sheet and bake ~8 minutes in preheated 350 degree oven.
