Marbled Chocolate Banana Bites
As I have noted in a number of past posts, I love baking banana bread, banana cake, banana desserts, anything with bananas. For example: Banana Rum Brownies, Banana Cake from Cake Mix Base, Banana Oatmeal Cookies, or Banana Cake, to name a few.
I found a recipe for Marbled-Chocolate Banana Bread and had to try it! I chose to bake it in a 9×11″ pan instead of a loaf pan. That way I could cut it into small square “bites”.
It turned out really good. Great for breakfast or dessert!
Here is the recipe:
2 c. flour
1 tsp. soda
1/2 tsp. salt
1 c. sugar
1/4 c. butter
2 c. mashed bananas
1/3 c. plain low-fat yogurt
1/2 c. semi-sweet chocolate chips
Mix together dry ingredients.
Cream butter and sugar in a different bowl. Beat in banana egg and yogurt until blended. Stir in flour mixture until just moistened.
Melt chocolate chips and cool slightly. Add 1 c. batter to chocolate, stirring until well combined. Spoon chocolate batter and plain batter into a loaf pan or rectangular pan and swirl together with a knife. Bake in 350 degree preheated oven for about 60-75 minutes (if loaf pan) and about 30 minutes (if using a 9×11″ pan).
