May Cookie Carnival Round-Up

The first week of June has arrived, meaning it’s time for the May Cookie Carnival Round-Up! This idea was started by Tami of Tami’s Kitchen Table Talk. She normally chooses the cookies each month and posts the round-up of pictures and links to those who participated. This month she so kindly asked if I would be the one to choose the cookies and post the round-up due to May being a very busy month for her.

Unfortunately, May seemed to be a very busy month for everyone and there were only two participants this month – at least both recipes were tested though!

The two recipes chosen for this month were:

Strawberry Rhubarb Bars

and

Easy Ice Cream Sandwiches

Katrina at Baking and Boys, says “The “star of the show” today, even though it’s a Cookie Carnival post is this perfectly creamy Homemade Strawberry Cream Cheese Ice Cream I made to go with the Ice Cream Cookie Sandwiches. …I made the Easy Ice Cream Sandwiches from Better Homes & Gardens.  The cookies are made with a pretty simple chocolate sugar cookie dough.”

If you’re not as ambitious as Katrina, you could simplify by using purchased ice cream or frozen yogurt, but I think these are probably even more delicious with her Homemade Strawberry Cream Cheese Ice Cream.

Krista @ Meet The Swans said ” I decreased the sugar (while increasing the rhubarb) because I do not mind the tart flavor – I thought it was a tasty complement to the sweet cinnamon spiced oatmeal crust.”
